Procrastination... Procrasti-nay-ay-tion, it's making me wait...

Grading at the airport - I just spent 25 minutes editing one essay & now I'm procrastinating on blogger. I can tell this is going to go well!

I was going to stay in and grade right now, but it is SO GORGEOUS outside.  It's blue, it's clear, it's sunny... I'm going to walk to get coffee, dag nab it!  (Watch, when I get outside it'll probably be 50 degrees, haha.)

P.S. This week a kid in my class put the classic "kick me" sign on the back of another kid when a sub was there.  People still do that?? Really?  And then of course I have to be the enforcer & get all strict with the kids.  Opposite of what I want.  All was redeemed though when we were talking about our Balclutha overnight trip & they freaked out at the prospect of watching a movie & eating pizza when we get back. (Literally screaming and hugging each other.) So easy to please!

Key Lime Pie!

I randomly decided it was time to make key lime pie.  I've never made a pie before, so it was intimidating!  Oh, and the recipe said to get 20 limes - 20!  But I only used about 6, so now we have a lime explosion.


After all the juicing, our apartment smells like lime grove.

Key Lime Pie
Ingredients
(Makes one pie)
1 (9 inch) prepared graham cracker crust
3 cups sweetened condensed milk  (Buy 2 14-oz cans)
1/2 cup sour cream
3/4 cup key lime juice  (Buy about 14 regular limes for juicing & zesting – not sure the amount of key limes)
1 tablespoon grated lime zest


Directions
.                Preheat oven to 350 degrees F (175 degrees C).
.                In a medium bowl, combine condensed milk, sour cream, lime juice, and lime rind. Mix well and pour into graham cracker crust.
Bake in preheated oven for 5 to 8 minutes, until tiny pinhole bubbles burst on the surface of pie. DO NOT BROWN! Chill pie thoroughly before serving. Garnish with lime slices and whipped cream if desired.

(I cooked 10 minutes based on recommendations from other people.)

Decided to do enchiladas with tomatillo sauce.  Found out that tomatillos are weird - and I got WAAAY too many of them




Got ambitious and made bananas foster!  You can't tell, but this is mildly on fire. :)

I have officially ended my Lincoln kick (momentarily) and moved on to the Game of Thrones books - I've never read this fast in my life!  Still can't decide if the show or the books are better...
